NOTE: There are various extraction methods of Proteins including Alkaline and enzymatic extraction methods. Alkaline Extraction methods have been adopted recently . The process conditions for alkaline extraction of rice protein are to extract at room temperature with 0.1mol/L NaOH in a solid-liquid ratio of 1:7 for 4 hours. The extracted rice protein has a purity of 90% and an extraction rate of 55%. The process conditions for enzymatic extraction of rice protein are temperature of 50 ℃, pH of 8, E/S of 5%, liquid-solid ratio of 3:1, and enzymatic hydrolysis time of 4 hours. The extraction rate of rice protein is 40%, and the protein purity is 45%. The water retention, oil absorption and foaming properties of rice protein extracted by alkali method are better than those of rice protein extracted by enzyme method, while the solubility, emulsification stability and foam stability of rice protein extracted by enzyme method are better than those of rice protein extracted by alkali method”.
